Fresh-cut vegetable plant

Raw product comes in, waits in the cooler, runs across two cut lines, and ships to dock appointments. Receiving and the dock sheet are current; the food safety log is current because it has to be. Yield is stale, figured at month end. Two things are dark: how long product sat in the cooler before it was cut, because nobody joins the receiving log to the line log, and changeovers, logged as down time, never by cause. That is where the shorted cases come from, and nobody totals the deductions. The Frame shows the chain from the cooler door to the remittance, and writes nothing back to your records.
